Le Colby d’Australie

Last night was the start of Le Tour de France.  A brilliant race, this year through Yorkshire and France.

As it was a special occasion, I decided to break out my recently matured Colby cheese.

Colby Cheese

This cheese was made by your truly using my very own recipe.  You can find the video tutorial of how to make this delicious cheese at this YouTube link; http://youtu.be/q0QzytxYeI8.  I vac-packed over three quarters of this massive 2 kg cheese, and placed an eighth on our cheese platter for 3.

Our friend David came around for the race, to partake in a few home made cerveza augmented with freshly grown tahitian limes, and of course, the cheese platter.

As you can see above, I have made two of the four cheeses.  Mine are the Colby and the Cotswold.  The others are a rather cheeky organic sheep’s cheese, and a King Island Dairy Blue Brie.  All delicious cheeses and a perfect compliment to the beer!
