Last night I had the pleasure of interviewing a very passionate home cheese maker from NSW, Australia. Carole Castles has two Jersey cows and from their milk she has made over 150 batches of cheese of various types.
We discuss what she loves about cheese making, how easy it is, and some of her favourites. She also describes the best way to get the most from your house cow, and how she matures the cheese.
I am totally envious. She has a curd nerds paradise!
